
We had dinner in a pumpkin for Halloween. Here is the recipe for those that might want to try it sometime! It was pretty dang yummy! (it tastes better than it looks, I promise!)
Dinner in a Pumpkin
1 small or medium pumpkin
1 onion chopped
2 T oil
2 lbs ground beef
1 can water chestnuts
2 cups cooked rice
2 T brown sugar
1 4 oz can mushrooms
1 can cream of chicken
2 T soy sauce
Cut off top of pumpkin. Thoroughly clean inside and take out seeds. (Face can be painted on the outside with permanent marker or acrylic paint). Preheat oven to 350 degrees.
In large skillet, saute onions until tender. Add meat and brown. Drain fat from skillet. Add soy sauce, brown sugar, mushrooms, and soup. Simmer 10 minutes stirring occasionally. Add rice and water chestnuts.
Spoon mixture into cleaned pumpkin. Replace top, put pumpkin on a baking sheet, and put in oven. Bake at 350 degrees for 2 hours or until pumpkin is tender. Serve meal from pumpkin using the meat as your vegetable.
